Umbria, green and serene. Although it is hemmed in by the regions of Emilia Romagna, Tuscany, and Latium, Umbria has managed to maintain its original simplicity founded on certain basic ingredients: olive oil, among the best in Italy, boar, lamb, hard wheat pasta of the finest quality and the precious black truffles from Norcia. The cuisine in Umbria is varied and includes meat, fish, cereals, vegetables, spices and herbs. The ingredients all have an equally important role and are combined with such equilibrium that the common definition of "poor" for this regioin's cooking seems hardly appropriate. "Essential" is perhaps a more fitting description, with its proud and primordial disdain for superfluous sophistication. |
